Nayagarh Famous Chhena Poda Recipe

Chhena poda or baked cottage cheese cake is simply a cake but you don’t need any flour or baking powder to make it. Chhena Poda literally means burnt cottage cheese in Odia language. This mouth watering odia cuisine is prepared with well-kneaded chhena or fresh cottage cheese, sugar, cardamom and cashewnuts. It is baked for hours till the aroma fills the air and it browns completely. Most importantly the flavor and fragrance of cardamom and caramelized sugar is sure to make you drool. Chhena poda is an authentic odia dessert made up of cottage cheese in Odisha and Nayagarh district is famous for Chhena Poda. Nayagarh Famous Chhena Poda is a very appetizing baked dessert, made from fresh cottage cheese or chhena, sugar, cardamom, cashew nuts and raisins. The delectable flavor of cardamom and caramelised sugar made this dessert heavenly and you just can’t restrict yourself to taste it again and again. Adopted the recipe from the odia chefs and we have made the recipe so easy that you can prepare it at home easily.

For an authentic odia chhena poda recipe; better use homemade fresh cottage cheese or chhena. It’s very simple to make. Just mix together the cottage cheese, sugar, cardamom powder, little milk or whey, cashew nuts and raisins till smooth and then bake it with caramelized sugar syrup.

Ingredients:

  • Crumbled cottage cheese/ Chhena – 2 cup
  • Sugar – 1 cup 
  • Cardamom powder – 1 tsp
  • Cashew nuts – 2 tsp
  • Raisins – 2 tsp
  • Milk– 4-5 tsp
  • Desi Ghee or butter (for greasing)
  • Sugar (for caramelization)
  • Pistachio (to garnish)
  • Preheat the oven at 180°.

Process:

1. At first take cottage cheese, sugar and cardamom powder and mix these really well.

2. Now heat a pan and fry cashew nuts and raisins lightly.

3. Add milk and blend till the mixture becomes smooth. Adjust sugar as per required.

5. Now add fried cashew nuts and raisins to it and mix it well.

6. Grease a baking pan with ghee or clarified butter. Spread 1 tsp sugar and heat the pan till sugar get caramelized.

7. When sugar get caramelized switch off the flame and then tilt the pan to spread the caramelized syrup all over the base.

8. Pour the cottage cheese mixture over it and spread uniformly with a spoon or spatula.

9. Bake in a preheated oven at the temperature of 180° for 35 – 45 minutes.

10. To check insert a toothpick in the center. If the toothpick comes out clean , then chhena poda is ready.

11. Now take out the pan when hot and turn upside down it on a plate to take out. Remember if the sugar syrup becomes cold at base, it will be hard and difficult to come out intact.

12. Garnish it well with some pistachio. You can serve yummy chhena poda or baked cottage cheese cake no matter hot or cold.
