Bara (Vada) is a famous street food of Odisha and very much popular in the whole country. This toothsome dish is a much loved snack in many homes and usually served as a traditional tiffin in different parts of Odisha. Among all types of Bara, the famous Dhenkanal Bara of Odisha is said to be the most delicious and mouth watering. A crunchy and crispy texture from outside with an extremely soft centre, Dhenkanal Bara has a tasty aroma of spices.

Bara is a really great option for you when you want to cook or eat something and it is an easy and appetizing dish that is liked by the people of every age group. The key ingredients of Bara is Black gram, Suji (Semolina), green chili, Onion (you can skip it as per your choice) and curry leaves (you can use coriander leaves too). The price of Dhenkanal Bara per piece varies from Rs 2 to Rs 5. Well, you can make a typical restaurant style Bara at your home too. Here we’re sharing the step by step process with pictures which will help you to know how to make tasty and crunchy Bara at home.
Bara Recipe:
• Black Gram (Biri / Urad dal) – 2 cups
• Suji/ Rava/ Semolina – ¾ cup
• Chopped Onion- 1 (Medium size)
• Chpped Green Chillies- 2 or add as required
• White turmeric/ Amba Ada (a ginger that tastes like mango)- 2cm long
• Chopped Fresh Curry Leaves- 2 stems/ 8-10 leaves
• Cumin seeds- 2 teaspoon
• A pinch of baking soda
• Salt as per the taste
• Water for making the black gram (Biri) batter
• Oil to fry
Methods of Preparation:
• Prior to making Bara, the black grams (Biri) need to be soaked in water for 6-7 hours or overnight.

• Wash the soaked Black grams and drain the water.

• Grind the mixture to make a thick batter and place this batter outside for 40 minutes till it gets fermented.

• Now add chopped green chilies, ginger, salt, chopped Onion, chopped curry leaves, Semolina and baking soda in a large bowl.

• Take a tablespoon of that fluffy batter in your hand and flatten it to a small ball in a doughnut shape. Now make a small hole in the centre of the Bara.

• Heat oil in a frying pan and put the small balls of Bara directly into the oil.

• Deep fry the balls until the color turns into beautiful golden brown.

• Bara is all ready to serve.
Serving Tips:

Try this Bara with Matar ghuguni (a curry made with yellow peas) which is a delightful and finger licking combo. Serve it with some Green chutney or Mango Chutney.
